Healthy Raspberry cacao avocado mousse slice
Do you love the taste of chocolate? How about a light and refreshing dessert? Have I got something for you! This Raspberry Cacao Avocado Mousse Slice is so easy to make, it’s vegan, gluten free and dairy free. It’s also refined sugar-free but still rich in flavour. You can whip up this slice in just 10 minutes using your Thermomix!
Ingredients : serves 10
Base ingredients :
• 1 cup of Dates
• 1/2 cup of Shredded Coconut
• 1/3 cup almonds
• 1/8 cup Coconut Oil
Middle ingredients :
1½ cups frozen raspberries (thawed)
Mousse Ingredients :
• 2½ large ripe avocados
• 1 cup Cacao Powder
• 3 Tbsp honey
• cacao chips (optional)
Method :
1. Take the frozen raspberries from the freezer and place in a bowl to thaw.
2. Add the dates, almonds and cacao melts to the Thermomix bowl with other base ingredients and mix for 10 seconds on speed 8, repeat until you obtain a fine consistency.
3. Line a round shallow tin with foil or baking paper and add the base ingredients. Spread and push the ingredients with the back of a spoon to create a firm base. Place in the freezer for 20 minutes.
4. Take the base from the freezer and spread the raspberries evenly to cover the whole base and place back in the freezer for 10 minutes.
5. Add mousse ingredients into the thermomix bowl and blend until you reach a smooth consistency with no lumps.
6. Remove the base and filling from the freezer and add the mousse mixture on top.
7. Place back in the freezer to set.
8. Garnish with more raspberries and cacao chips (optional) and slice to serve!
9. **Keep in the fridge for soft mousse or freezer for a firmer set**
