Teriyaki Sauce is made with just 3 ingredients and is so easy that store bought teriyaki sauce should be illegal! Not only is it easy to make your teriyaki sauce at home, but the ingredients in store-bought teriyaki sauce are quite scary. Bottled Teriyaki Sauce doesn’t even come from Japan!
Teriyaki sauce can be used to marinate chicken, beef, and fish. However, it can also be used for pork and offal. The most popular of is Teriyaki Chicken. This marinade, which is thick and sweet with salt, works well with poultry and gives the chicken a lovely caramelisation when fried over high heat.
My Japanese mother would prefer plain chicken to being marinated in Teriyaki Sauce. It’s really easy to make, only 3 ingredients (plus water), just combine in a pan and let it reduce. The marinade keeps in the fridge for a few weeks so it’s so great to have on hand for quick meals, and perfect to marinade meat then freeze it (with the marinade). But because it’s so easy and fast to make, I don’t really feel the need to make a batch to keep on hand.
Mix 3 to 4 tablespoons of Teriyaki marinade with 1 lb/500g meat. Marinate for at least 20 minutes but better overnight. Although the marinade liquid can be used for making a glossy sauce, if you have marinated overnight, you might not need it. The chicken marinade makes enough sauce to make a good sauce.

Teriyaki Sauce at Home
Ingredients
- 1/4 Cup soy sauce
- 1/4 Cup mirin
- 1/4 Cup Japanese cooking wine (sake)
- 1/4 Cup Water
Instructions
Teriyaki Sauce Marinade (“Marinade”)

Mix all ingredients in large saucepan. Heat on high. The quicker the pan gets smaller, the faster it will cook. It takes me about 10 minutes. However, it all depends on how large the pan is.

Bring to boil. Then reduce heat and simmer for half an hour. The consistency should be similar to a light syrup.

Allow to cool to room temperature before use.

Marinate meat for 20 to 30 minutes with 3 to 4 tablespoons Marinade per 1 lb/500g. Marinating fish is not advisable. Allow it to marinate for no more than 20 minutes.

Teriyaki is great with beef, chicken, and fish that are strong in flavours like salmon.

The meat can be pan fried, grilled or barbecued.

If the meat is being cooked on a BBQ/grill, or broiling/grilling it, be sure to basten each side before you begin cooking.

If you’re cooking it on the stove, just before the meat is done cooking, add 2 tablespoons of water to a pan. Stir the mixture with the marinade. Reduce heat to medium-low and simmer for about 5 minutes. Once the sauce is thickened, add the meat to the pan and coat with the sauce.
