This Recipe Minestrone Soup is very easy to make with your Thermomix.
It’s very nutritious, and can be personalised according to the vegetables you have in the house.
Minestrone soup is a very filling recipe that can be made in 45 minutes only!
Ingredients :
- 140g (2) carrots
- 80g (2) celery stalks
- 120g (1) potato
- 100g (1) brown onion
- 5g (2) garlic cloves
- 20g (1 tbsp) extra virgin olive oil
- 40g (2 tbsp) vegetable stock paste (see recipe here)
- 600g (3 cups) water
- 400g tinned cannellini beans, rinsed & drained
- 400g tinned tomatoes
- 80g (1 cup) wholemeal pasta (any shape)
- salt and pepper
- 15g (3 tbsp) fresh parsley, chopped
Method for Recipe Minestrone Soup:
1. Place carrot, celery and potato in Thermomix bowl and dice for 3-4 seconds at speed 4 until chopped. Remove from bowl and set aside.
2. Add onion and garlic to the bowl and dice for 5 seconds at speed 4. Add olive oil and heat for 2 minutes at Varoma temp. Cook onion and garlic for 5 minutes at 100°C on speed 3 reverse.
3. Add , carrot, celery and potato, and cook for 5 minutes at 100°C on speed 3 reverse.
4. Add the stock paste, water, beans and tomatoes. Cook for 5 minutes at 100°C on reverse speed soft (wooden spoon), then reduce to 60°C on reverse speed soft (wooden spoon) for 20 minutes.
5. Add pasta and cook for 10 minutes at 100°C on speed 2 reverse until pasta is al dente. Add some more water if soup is too thick.
6. Season with salt and pepper. Divide between 4 bowls and top with chopped parsley to serve.
