Hedgehog Slice with Thermomix (16 servings)

This quick and easy Hedgehog Slice is  one of the perfect healthy treats. It can be added to kids/adults lunch boxes. It’s guilt- free and packed with goodness, no sugar just pure Honey.

After the first bite,  you will be so in love.  This version is even healthier : It’s a little crunchy, and filled with chopped nuts, puffed rice (instead of biscuits) and coconut.

You will be surprised how easy this Hedgehog Slice can be made! with your Thermie !

Ingredients to make 16 servings of Hedgehog Slice :

• 170g dates, pitted
• 300g raw nuts (e.g. walnuts and almonds)
• 80g (4 tbsp) honey
• 50g cacao/cocoa powder
• 80g desiccated coconut
• 250g puffed rice
• 80g (4 heaped tbsp) coconut oil
• 200g dark chocolate (70% cacao)

Method :

1. Soak dates in boiling water for 15 minutes, then drain.
2. Place nuts and dates in the Thermomix bowl and pulse a couple of times until chopped– aim for a chunky consistency, not too fine.
3. Add honey, cocoa/cacao, coconut and puffed rice, and mix for 15-20 seconds on reverse speed 3 until well combined.
4. Line a slice tin with baking paper.
5. Put coconut oil in a saucepan over a low heat until melted. Tip half of the liquid oil into the Thermomix bowl and mix for a further 10 seconds on reverse speed 3.
6. Transfer the mixture to the lined slice tin and press down firmly until it is evenly spread and compacted. Place tin in the freezer. 7. Add the chocolate to the saucepan with the remaining coconut oil. Return to a low heat until chocolate is melted.
8. Take the slice tin out of the freezer and pour the melted chocolate over the top until slice is evenly covered.
9. Return to the freezer for 1-1.5 hours. When set, slice in 16 squares. Store leftovers in an airtight container in the fridge.

Notes :

● The dark chocolate can be substituted for milk chocolate, if you prefer, but calories and sugars will need to be adjusted.

● When slicing, dip the knife into boiling water first to avoid cracking the chocolate.
