Vegetable Stock Paste Recipe is one of the first recipes most people make, when they just get their thermomix delivered.
You can simply use whatever ingredients you have on hand! 
Ever since I started making my own Vegetable Stock Paste a couple of years ago, I haven’t stopped.
This Homemade Vegetable Stock Paste is not only good for adding into soups, it also add flavor to stir -fries or curries! It’s very easy to make and doesn’t take all too long for a big batch!

Homemade Vegetable Stock Paste Ingredients :

• 210g (3) carrots
• 200g (2) tomatoes
• 100g (1) brown onion
• 80g (2) celery stalks
• 5g (2) garlic cloves
• 110g (1) zucchini
• 10g (1/4 bunch) parsley
• 10g (1/4 bunch) marjoram
• 10g (1/4 bunch) thyme
• 30g (30ml) olive oil
• 120g salt

Method :

1. Place all ingredients except the salt and oil in the Thermomix bowl and chop at speed 5 for 20 seconds.
2. Add salt and oil. Take the measuring cup out and place the simmer basket on top instead. Cook for 25 minutes at Varoma temp on speed 2 reverse.
3. Gradually bring the speed up to 10 over the course of 1 minute, then puree for 15 seconds at speed 10. Scrape down the sides and repeat if needed to get a smooth paste.
4. Store in a sterilised jar in the fridge for 2 months, or freeze in an ice-cube tray.
1 tsp of paste is equivalent to 1 stock cube.

Note: You can use any leftover vegetables for this recipe. Search the back of the fridge for any veg that are going limp and use them to make a great tasting stock paste, while cutting back on food waste.
