Italian Nonna’s Southern Pineapple Cake

Ingredients:

For the Cake:
– 2 cups all-purpose flour
– 2 cups sugar
– 1 tsp. baking soda
– 2 large eggs
– 1 tsp. vanilla extract
– 1 – 20 oz can of crushed pineapple (with juice), Dole recommended

For the Topping:
– 1/2 cup butter
– 2/3 cup evaporated milk
– 1/2 tsp vanilla extract
– 1 cup sugar
– 1 cup chopped pecans or walnuts
– 1 cup coconut flakes

Instructions:

Prepare the Cake:
First, I preheat my oven to 350°F (175°C) and grease and flour a 9×13 inch baking dish.
In a large mixing bowl, I combine 2 cups flour, 2 cups sugar, and 1 tsp. baking soda. Then, I add 2 large eggs, 1 tsp. vanilla extract, and the can of crushed pineapple along with its juice. I mix everything until well combined.
Next, I pour the batter into the prepared baking dish and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Make the Topping:
While the cake is baking, I prepare the topping. In a saucepan over medium heat, I melt 1/2 cup butter and stir in 2/3 cup evaporated milk, 1/2 tsp vanilla extract, and 1 cup sugar. I bring the mixture to a boil, then reduce the heat and simmer for about 5 minutes, stirring constantly until the sugar is completely dissolved.
After removing the saucepan from the heat, I stir in 1 cup chopped pecans or walnuts and 1 cup coconut flakes.

Finish the Cake:
Once the cake is baked, I remove it from the oven and poke holes all over the top with a fork or skewer while it’s still hot. Then, I pour the warm topping evenly over the hot cake, allowing it to seep into the holes and cover the surface.
I let the cake cool completely before serving, allowing the topping to thicken and form a deliciously rich layer on top.
